Cathy Bianchi was born in Portland, Maine where she lived until age 6. She then moved to Southern California with her family where she eventually married and had 2 children. Some of Cathy’s earliest creative endeavors surfaced after graduating from Beauty College. After 2 years working in salons and a brief stint doing administrative work in the construction field, a friend invited her to enroll for a Cake Decorating class. After all, Cathy had always enjoyed cooking and baking for her family and friends.

Cathy’s friend was an Instructor for Wilton Enterprises, a private firm offering classes to help "soft sell" their baking products and supplies. Needing 1 more student so the class wouldn’t cancel, the friend paid Cathy’s tuition and loaned her the baking supplies needed for the 6 week class. Wilton quickly took notice of Cathy’s cake creations and hired her to teach the series when her friend became pregnant. With Cathy’s popularity, the Wilton program grew from 1 to 5 classes per week. Soon Cathy was running the Southern California program with 75 stores and 150 instructors.

Cathy continued spreading her cake secrets for Wilton Enterprises through the 80s in the Long Beach and Orange County regions. She later moved to Northern California and brought her passion for teaching and cake decoration to the greater Sacramento area. Cathy has taught cooking and cake decorating classes at American River College, Sierra College, Placer School for Adults and Michael’s stores as well as having taught classes for Folsom Park & Recreation.

Her work was also recognized on many television shows including Good Morning Los Angeles and locally on Channel 13 and Channel 3 cooking segments. One of her proudest moments is a national spot on HGTV (Home and Garden TV) where she taught the audience how to create Cookie Bouquets. She received glowing emails from fans all across the country.

Cathy is now on the entrepreneurial road less traveled and has recently celebrated 3 years in business as Cathy’s Cakes in Auburn, CA. Specializing in personalized cakes for weddings, anniversary’s, birthdays, baby showers, corporate and community events as well as religious and cultural affairs, Cathy’s scrumptious deserts and appetizers are regularly featured at major community events and are often the centerpiece of any special function. While Cathy’s Cakes are fit for a king and his queen, one of her talents is the ability to create your mouth watering masterpiece on just about any budget!

From traditional to whimsical and from elegant to the completely unexpected, Cathy’s Cakes are truly individual and represent a one-of-a kind, made-just-for-you visual and taste experience. Cathy knows a cake must look good and taste good too!

One of her more difficult cakes was named "Day of the Dead" and was a special order wedding cake for a special bride, her step-daughter. The order called for the cake colors to include red, white, black and leopard print. The result was an incredible 3 foot tall cake with 4 tiers, all off-set with a beautiful white classic finish, black accents, red roses and special advanced baking products to create the leopard print bands. Knowing this bride’s love for the unusual, Cathy took the idea a step further and added skulls and crossbones among the red roses for a special touch that this bride simply adored!

With flavors ranging from Classic French Vanilla with Banana Fosters to Chocolate with Beer Buttercream, this adventurous gal knows no boundaries and is never afraid to create something new or to add an interesting twist on a favorite tradition.

After nearly 20 years of baking experience and teaching the art of cake decoration, Cathy has embraced the gift of diversity from her students and customers who come from all walks of life and who have taught her some things in turn. Today, Cathy credits her early teaching experience for her modern day elegant to enchanting cakes that are as unique as her customers who order them.

In addition to her famous cakes, Cathy’s personal choice when delivering a special treat for Elvin Bishop, was her own Pumpkin Torte. Elvin called to thank her personally the next day. Neil Diamond has also been the lucky recipient of Cathy’s Pumpkin Torte specialty.

In addition to running Cathy’s Cakes full time, she continues teaching one night per week at Cake Castle Bakery and Supplies in Carmichael. She can also be found judging foods and deserts at the State Fair as well as other Napa County, Placer County and Gold Country Fairs this summer season and in past years.
