Carla Makes Grilled Pizza | From the Test Kitchen | Bon Appétit
Fire up the grill to make these simple and delicious personal-size pies. Go the classic route with marinara sauce, shredded mozzarella, grated Parmesan and dried oregano—or try the Margherita version with sliced tomatoes, fresh mozzarella and basil leaves—for an easy and nourishing meal.
- Heat grill to medium. Stretch each quarter of dough until it's about a 7- to 8-in. round or oblong shape and about 1/8-in. thick. Brush both sides with oil and place on 2 baking sheets.
- Place the pizza dough on the grill and cook, covered, until the tops begin to bubble and bottoms become crisp, about 2 minutes. Shut off the burners on one side of the grill. Using tongs, turn the crusts and transfer to the unlit side of the grill.
- Working carefully, spread the sauce over each pizza then top with the mozzarella, Parmesan and oregano. Close cover and grill until the bottoms are browned and the cheese is melted, 7 to 10 minutes, rotating pizzas after 3 minutes.
